

Today, we’d like to introduce you to Dayna Lee.
Hi Dayna, can you start by introducing yourself? We’d love to learn more about how you got to where you are today.
I’m a native New Yorker, but my dad’s side is from Savannah… so I’ve been coming here to visit my whole life.
My background is in International Education, but I decided to turn a hobby (wine) into a second career in 2016. After receiving professional wine/spirit certifications (WSET Level 2 in Wines & Spirits) and becoming a Certified Sherry Wine Specialist, I entered the industry, merging my background in education and newfound skills.
Since then, I’ve received wine/spirits education through my various roles at Metropolitan Wine Group, Wine.com, Liquor.com, Maker’s Mark Distillery, NYC restaurants, and through brand ambassador work, which I still do today.
Bringing my expertise and network to Savannah, I founded The Savannah Wine Institute in October 2019. but due to the pandemic (gulp) and the alcohol-permitted process with the City of Savannah (double gulp), I’m just getting started creating fun & accessible ways to explore wine and food at my Dixon Park location.
Opened this Fall, the Savannah Wine Institute offers interactive wine classes & events, a boutique of curated wines and wine accessories, wine-service workshops, and certification courses for connoisseurs and those entering or currently in the hospitality industry.
Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
At the start of the process in Oct. 2019, everything seemed promising, but as soon as March 2020 rolled around, everything was at a complete standstill. I was still based in NYC, so everything was at a standstill as New York State was completely shut off.
When I was able to travel, due to some zoning issues, I had to find a new space for the brick and mortar, and once I came upon the Dixon Park location in Dec. 2021, I contracted long-term COVID-19 and had over a year of health complications, and surgery all while applying for alcohol licensing with the City of Savannah.
Finally, in late Summer 2023 (yes! 2023), I got the proper permit to sell and serve wine onsite.
It’s been a slow burn re-introducing myself to the Savannah community after an almost 5-year process. Still, I’m here and hopeful that all ducks are in a row (quack) and that I can finally live out my vision to be an epicenter of wine education in Savannah and the entire Southeast.

We specialize in offering immersive wine-tasting experiences that showcase a diverse selection of varietals and styles worldwide. Starting with intimate guided tastings, we’re working on featuring renowned winemakers, authors, and industry professionals. Each experience is carefully crafted to delight and educate our guests.
We’re also focused on providing professional development for Savannahians. We are a resource for the large hospitality population who live in Savannah and surrounding areas. Training in wine will open up doors for additional compensation/gratuities, upward mobility, and employment opportunities worldwide for those in the food & beverage industry.
As an extension, our volunteer ambassador program and teaching assistant programs make training opportunities and certifications affordable for all, regardless of background and financial capabilities. We’ve created a space where diverse voices are valued and included, fostering an environment where everyone feels respected and empowered.

I subscribe to the idea that the energy you put into the world influences the events that happen to you, commonly referred to as the law of attraction or a belief in karma. Essentially, that positive energy attracts positive outcomes and vice versa.
In this worldview, luck isn’t just random chance; it’s more about the energy you emit and the vibes you send into the universe. By projecting good energy—through positive thoughts, actions, and intentions—I aim to create a positive environment around me. This positive energy attracts similar positive energy from the world, leading to what appears as “good luck.”
So, with all the trials and tribulations getting this place going, I TRIED to remain positive and gracious to myself and the world, and I believe that luck is finally beginning to pay off. CHING CHING, BABY!
