Today we’d like to introduce you to Megan Savic.

Hi Megan , can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
The Canopy Restaurant opened four years ago and we are located in an old historic home. We are a from-scratch, slow-food kitchen and we do everything in house. The Canopy serves breakfast, lunch, dinner, and brunch because we really want to be that “third space” for our community.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
The road has been smooth is some areas, and bumpy through others, as I’m sure is the case with every small business. I would say our biggest bump, four years into it, is the volume. We love our town and believe it’s a really special place, but the local population is only around 1,400 which means we don’t see enough guests on a regular basis. We rely heavily on tourism and people traveling along i95.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
As an Indigenous chef, I work very closely with local purveyors and ingredients. The Canopy Restaurant serves a seasonally rotating menu in order to provide the most local and freshest food possible. It is our duty, as Chefs and stewards of the Earth, to educate our guests on sustainable culinary practices and accessible nutrition for all. While I am proud to be known for my creativity and style, I am extremely gratified to be also be known as a community advocate and protector of natural resources.

What would you say have been one of the most important lessons you’ve learned?
The most important thing I have learned along my journey is other people. Learning to live my life in the service of others and work as a team to execute a common goal is a skill that can’t be picked up many places besides a kitchen.
